Smultron, is something you would use for everyday quick edits of code.  It does support multiple files, syntax highlighting, and I really like their simplicity but still providing some decent power as a editor.  Snow Leopard is also supported in their beta release.</div>

It is looking a bit oudated compared to some of the other editors in this list, but it is very stable and runs on Java.</div>
